Barter’s Fall Drink Serves Up Apple Cider With a Dash of Nostalgia

“We love the arts culture in Hamtramck,” says Cait Pluto, co-founder of Barter, the recently opened bar and performance venue in Hamtramck. As the weather cools down, the cozy space decked with antique furnishings is the ideal venue to enjoy a drink and a live show. Barter’s co-owner and beverage director, Jennifer Sandella, shares a recipe for the Villarena Apple Cider Sour, which draws from her memories of picking apples in Connecticut with her grandmother in the fall. “I created my salted apple cider syrup with that memory,” Sandella says, adding that she named the drink after her grandmother’s hometown of Villarena, Puerto Rico.

Ingredients

¾ oz. Bacardi Silver

¾ oz. Bacardi Ocho

¾ oz. fresh lemon juice

¾ oz. salted apple cider syrup (recipe below)

2 dashes Angostura bitters

1 egg white

1 tsp. sugar for rim

1 tsp. cinnamon for rim

Salted Apple Cider Syrup

8 oz. white sugar

3 oz. apple cider

½ tsp. sea salt

Syrup Directions

Combine 5 oz. of water with the white sugar and sea salt in a small saucepan and bring to a low simmer. Stir the mixture until the sugar is dissolved. Remove the saucepan from heat and pour in the apple cider. Stir until the mixture is thoroughly combined. Store in the refrigerator.

Drink Directions

Rim a coupe glass with cinnamon and sugar. In a cheater tin, add all ingredients, place large tin over cheater, and dry shake for up to 20 seconds. Add ice and shake again until mixture is chilled. Single strain the drink into the glass. Garnish with Angostura bitters.
